Thanksgiving Leftovers Nachos

Because Thanksgiving dinner is too delicious to only eat once.
Let’s face it, the best part of Thanksgiving dinner is the leftovers. You’ve changed into your stretchy pants and now it’s time to get down to business (again). But the key to eating Thanksgiving leftovers is doing it differently than you did at dinner. Enter, Thanksgiving leftovers nachos.
First, start with a bed of sweet potato tortilla chips. Our favorite chips are from Food Should Taste Good, but you don’t have to take our word for it (read: you should.) Layer on shredded turkey; don’t be shy, really stack it to the ceiling. Next comes stuffing. Stuffing can be a controversial Thanksgiving dish, but we are pro-anything made primarily from bread, so we really loaded ‘er up with the good stuff. Add a few dollops of mashed potato and drizzle with gravy and cranberry sauce until your pilgrim ancestors are content. Finally, sprinkle with shredded Gruyere for the finishing touch.
